This is a recipe that my grandmother used to make on special occasions. Actually, I would make it and say it was hers but hey, it’s all fair! This is not TexMex, it stands alone with homemade tortillas, Salsa Verde, Salsa Rojo, refried beans, Salata, Curtido and a whole cornucopia of Mexican delights. 
Do not forget the Tequila shots!

I made this last night and have plenty of leftovers for breakfast, lunch tacos, and a few Enchiladas. Enjoy I enjoyed the meal last night and recused myself to the Cigar Lounge with a nice Payback Boutique Cigar. Fantastic combination with a few Cuervo Shots. The complete recipe is here! 
No muss, no fuss! Serve immediately and make sure you have a
 trivet to set the hot skillet on, otherwise, Mommasita will become highly upset as you burn her table!  
Here is the Menudo Mix I use. 

Menudo Mix
1 teaspoon chili powder 
1 teaspoon garlic powder or flakes
1 teaspoon dried onion flakes
½ teaspoon basil
½ teaspoon thyme or rosemary
½ teaspoon chopped dried orange peel (optional)
½ teaspoon ground cumin
½ teaspoon dry powdered mustard
½ teaspoon oregano
½ teaspoon sugar
¼ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon cumin seed
